How To Make A Great Breakfast Burrito

A great breakfast burrito is easy to make and extremely satisfying. A great breakfast burrito is all in the ingredients. Pick fresh ingredients, pick the ingredients you love, and pick a large tortilla that rolls up to perfection and you will have a great breakfast burrito. Another ingredient that makes a burrito great is the cheese. Make sure you use shredded cheese and make it quality cheese. Don’t get me wrong, I love fake cheese as much as the next person, but for this burrito, quality cheese makes it really delicious. While this recipe does not include potatoes, you can certainly add them or just serve them on the side. I like my burrito with or with potatoes, especially if the potato is crunchy.

How To Fold A Breakfast Burrito

Folding a breakfast burrito is not hard, but there are a few tricks to know in order to get it to fold correctly. The same goes for wraps.
  1. The first thing you need to do is warm up the tortilla. A warm tortilla is much more pliable than a cold one and your burrito will fold much easier using a warm tortilla.
  2. Place your ingredients just off the center of the burrito. There are some who say you should put your ingredients in a specific order, I think it depends are the ingredients. If you are using potatoes or rice, you should start with that because they will soak up the rest of the ingredients. I usually end with cheese so that it melts into the rest of the ingredients.
  3. Next, start by folding the side closest to you over the ingredients and away from you. Then pull the tortilla back over the filling so that the ingredients form into a roll. You should have the top part of the tortilla tight over the ingredients.
  4. Now roll the tortilla forward just slightly until you have a tight roll.
  5. Then fold in about an inch or so on each side to seal in the ingredients.
  6. Continue rolling forward until the burrito is complete. You should have a burrito with tightly wrapped ingredients that do not fall out each side.

What Goes With Breakfast Burrito

Since this recipe does not include potatoes, I would serve either hash browns or country potatoes with it. Fruit is also a great option, especially if you do put potatoes in the burrito. Honestly, there is so much to a burrito already you do not need much for a side. But if you like, serve this is guacamole and sour cream. Those are staples in the burrito world. You could also make a sauce to go over it like a good mole sauce. I used to frequent a great little diner in Seattle that served the best breakfast burrito with mole sauce. Other sauces you could consider are enchilada sauce, chili Verde sauce, adobo, or a spiced cream sauce. And of course, let us not forget Pico de gallo and salsa. How To Freeze A Breakfast Burrito

 The big thing to remember when freezing a breakfast burrito is to leave out any avocado. It does not freeze well. This is unfortunate if you love avocado (as I do) but you can always add some guacamole after you have reheated the burrito. To make sure the burrito does not stick to anything, roll it in some parchment paper and seal it as tight as you can and place on a baking sheet in the freezer. Once the burritos are frozen you can place them in a freezer bag and pull them out as you desire. Again, remove as much air from the bag as you can when freezing, the burritos will keep longer.

How To Reheat A Frozen Burrito

Reheating is simple if you have a microwave. Just place them in the microwave on high for two or three minutes. This will depend on your microwave. You can also use a frying pan to give the burrito a little crunch. Just heat up a frying pan on medium with some non-stick spray, and place the burrito in the pan for about 30 seconds on each side.
Another option, which is great if you are camping, is to let the burrito thaw out. This will happen if you have it in your cooler for any length of time. When you are ready to eat the burrito, heat up a pan over medium-low heat. Spray some cooking spray in the pan or use a small amount of olive oil. Cook the burrito in the pan until the ingredients are hot. Times on this may vary and watch how hot that pan is. Keep a lower temp so that the tortilla does not overcook while the ingredients are heating up.

Ingredients

  • 2 large flour tortillas
  • 6 large eggs
  • 1 oz cooked bacon, ham or sausage
  • 1/2 c pepper jack cheese, or your favorite cheese, shredded
  • 2 tbsp chopped green onions, raw
  • 1/4 c sauteed onions
  • 1/4 c sauteed mushrooms
  • 1/2 c jack cheese, shredded
  • 1 tbsp guacamole
  • 2 tbsp salsa
  • 1 tbsp sour cream
  • 1 tbsp olive oil
  • 1/2 tsp salt and pepper
  • 1/8 tsp cayenne pepper
  • 1/4 tsp chili powder
  • 1/8 tsp ground cumin
  • 1/4 tsp cilantro
  • 1/4 c diced tomato

Instructions

  1. Saute onions in olive oil for two minutes then add mushrooms, salt, pepper, chili powder, cumin and Cheyenne pepper and saute for about another 5 to 10 minutes. Remove from skillet and set aside.

  2. Cook bacon, sausage or ham if needed and set aside.

  3. Scramble the eggs and set aside.

  4. Heat the tortillas by either wrapping them in some foil and placing them over a fire or heat source. Alternatively, you can place them in a clean dry frying pan and heat for about 30 seconds on each side. If you have an oven you can wrap in foil and place in a warm oven. Do not over heat them.

  5. Take one tortilla and place some of the eggs in the middle.

  6. Add meat on top of the eggs.

  7. Add the sauteed onions and mushrooms on top of the meat.

  8. Add some pepper jack cheese to taste.

  9. Fold the tortilla by folding in the sides about a quarter ways to the center. Fold the side closest to you over the side folds while scooping the ingredients into the tortilla.

  10. Repeat with remaining tortilla.

  11. Wrap in foil and place over low heat for about 5 minutes or until reheated. Alternatively, you can heat a frying pan to medium low and add some non-stick spray. Place the burritos in the pan and brown on each side.

  12. Unwrap and place on a plate.

  13. Sprinkle cheddar cheese on while the tortilla is still hot.

  14. Add salsa, guacamole, and sour cream as desired.

  15. Sprinkle with diced tomato, green onion and cilantro before serving.

Recipe Notes

Be sure to use a heated tortilla. You can pan fry the assembled burrito or heat up the tortilla before you build it. A heated tortilla always tastes better.
